Crepes perfect match

This week is the last week to get everything ready before we head out for a month long trip, I have plenty of things to do, like cleaning, getting the pets ready to stay home, packing, and most importantly is not letting my food in the freezer go to waste.

America is known as the wasteful country, because some people just throw out their food and let it spoil instead of making dishes out of the ingredients they know they won't get to before they spoil. Like those berries you got from the farm and you bought way too much.

Since I hate wasting food and I know we'll be gone for a little while I got out my favorite recipes. My first idea was to use up the leftover strawberries so I decided to make fresh strawberry syrup (mmmm to put on my yummy crepes). here's the recipe: http://www.laurafuentes.com/ihops-strawberry-syrup-recipe/.

BETTER THAN IHOP'S STRAWBERRY SYRUP

INGREDIENTS
  • 2 cups diced strawberries
  • ½ cup unrefined sugar (sucanat), sugar or, honey
  • 1 cup + 2 Tablespoons water, divided
  • 1 Tablespoon cornstarch
INSTRUCTIONS
  1. Combine 2 Tablespoons water and cornstarch in a small dish and set aside.
  2. In a medium saucepan, bring water, sucanat (or sugar) and diced strawberries to a boil. Stir occasionally. Reduce heat and simmer for about 10 minutes. Add water+cornstarch mixture and blend well. The sauce will thicken, the strawberries will have semi dissolved and the mixture will begin smelling like warm jelly. Turn off heat and allow some cooling before serving.
  3. My picky eaters like “smooth” syrup so I take this extra step: Carefully pour strawberry sauce inside a blender (or stick an immersion blender in the pot if you have one) and mix well until it’s a thick sauce. Slowly add about ¼ cup more water while blending.
  4. Store in refrigerator up to 30days. Take out a few minutes before serving at room temperature or warm.
NOTES
If you want to eliminate the 'refined' sugar from this recipe, you can use maple syrup. Cook your berries and once they are "reduced" add in ⅓ cup maple syrup.

I decided not to do the whole adding cornstarch to the syrup, since the syrup is plenty thick enough. Let me know what you thing of this recipe & if you think it's better than IHOPs strawberry syrup.

A truckers wife

Recently my husband went through trucking school and now on Monday the 27th he will officially set out on the road to start a new and exciting career.

Straight out of school he started training with an experienced trucker and they left out on the road for 3 weeks, while I stayed home and held down the fort. Unfortunately this whole process has been very hard on our relationship. Change has never been my strong suit and with this big of change it's even more difficult.

Another reason it's so hard to deal with this new life journey is I've been at home by myself not having to deal with another person and when we come back together it's like we forget how it was when we were together. On Monday I am going to start going with him and I really think this will put our relationship back to where it was. Stay tune to see where this journey takes us.
